✨ Auntie Glammah’s Garden Stew (Vegan & Easy) ✨
🛒 Ingredients:
(Serves 4-6 fabulous beings)
1 tbsp olive oil (or a splash of veggie broth if oil-free)
3 small potatoes cubed
1 small red onion, chopped
3 cloves garlic, minced
2 carrots, sliced
2 zucchini, chopped
1 yellow squash, chopped
1 ear of fresh corn (or 1 cup frozen), kernels only
1 cup cherry tomatoes, halved
1 can (15 oz) chickpeas, drained & rinsed
4 cups veggie broth
1 tsp smoked paprika
½ tsp ground turmeric (for glow!)
1 tsp Herbes de Provence or Italian seasoning
Sea salt & cracked pepper to taste
A handful of fresh basil or parsley, for serving
Optional: a pinch of chili flakes, if you like a little heat
🔮 Directions:
Sauté the spell: In a large pot, heat olive oil over medium. Add onion and garlic. Stir clockwise and say something kind to yourself — it matters.
Add the root and fruit: Toss in potatoes, carrots, zucchini, squash, and corn. Sauté for 5–7 minutes until softened and fragrant.
Summon the simmer: Stir in chickpeas, cherry tomatoes, veggie broth, and all your seasonings. Bring to a gentle boil, then reduce heat and let it simmer for 15–20 minutes.
Taste & enchant: Adjust salt, pepper, or herbs as desired. Don’t be afraid to improvise — this is your canvas, darling.
Garnish with green: Ladle into bowls and top with torn basil or parsley. Serve with a crusty slice of sourdough or over rice, if the mood strikes.
