Auntie Glammah’s Garden Stew

✨ Auntie Glammah’s Garden Stew (Vegan & Easy) ✨

🛒 Ingredients:

(Serves 4-6 fabulous beings)

  • 1 tbsp olive oil (or a splash of veggie broth if oil-free)

  • 3 small potatoes cubed

  • 1 small red onion, chopped

  • 3 cloves garlic, minced

  • 2 carrots, sliced

  • 2 zucchini, chopped

  • 1 yellow squash, chopped

  • 1 ear of fresh corn (or 1 cup frozen), kernels only

  • 1 cup cherry tomatoes, halved

  • 1 can (15 oz) chickpeas, drained & rinsed

  • 4 cups veggie broth

  • 1 tsp smoked paprika

  • ½ tsp ground turmeric (for glow!)

  • 1 tsp Herbes de Provence or Italian seasoning

  • Sea salt & cracked pepper to taste

  • A handful of fresh basil or parsley, for serving

  • Optional: a pinch of chili flakes, if you like a little heat

🔮 Directions:

  1. Sauté the spell: In a large pot, heat olive oil over medium. Add onion and garlic. Stir clockwise and say something kind to yourself — it matters.

  2. Add the root and fruit: Toss in potatoes, carrots, zucchini, squash, and corn. Sauté for 5–7 minutes until softened and fragrant.

  3. Summon the simmer: Stir in chickpeas, cherry tomatoes, veggie broth, and all your seasonings. Bring to a gentle boil, then reduce heat and let it simmer for 15–20 minutes.

  4. Taste & enchant: Adjust salt, pepper, or herbs as desired. Don’t be afraid to improvise — this is your canvas, darling.

  5. Garnish with green: Ladle into bowls and top with torn basil or parsley. Serve with a crusty slice of sourdough or over rice, if the mood strikes.

🧙‍♀️ Auntie Glammah’s Notes:

  • This stew freezes like a dream, so make a double batch and gift a jar to someone you adore.

  • Add chopped kale or spinach in the last few minutes for extra magic.

  • For a richer stew, stir in a spoonful of coconut milk before serving.

🎨 Cooking is creation, my love.

When you choose your ingredients with care, stir with presence, and serve with joy — you are making art. You are making magic. You are nourishing the soul.*

So light a candle, queue up some Billie Holiday or birdsong, and make a little kitchen magic. After all — art isn’t just on the canvas. Sometimes, it’s in the stew.

With ladle in one hand and love in the other,

Auntie Glammah 🍵🦊💖
